Servings: About 16 waffles

INGREDIENTS

  • 1 cup of water
  • ¾ cup of large rolled oats
  • 3 tablespoons of butter
  • 1¼ cups of flour
  • 1 tablespoon of sugar
  • 1½ cuil. à thé de poudre à pâte
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 2 large eggs
  • 1 to 1½ cups of buttermilk
  • ¼ cup of melted butter
  • Confectioners' sugar
  • Optional: fresh fruit coulis

PREPARATION

  1. In a saucepan, bring the water to a boil. Add the oats and cook, stirring, for 3 minutes. Remove from heat.
  2. Add the butter and mix until it has melted. Let it cool.
  3. In a large bowl, sift the flour, sugar, baking powder, baking soda, and salt.
  4. In a large bowl, mix the eggs and buttermilk, then fold in the cooled oatmeal mixture.
  5. Add the egg mixture to the dry ingredients and mix until the batter is smooth, no more (If the batter is too thick, add a little buttermilk).
  6. Preheat the waffle maker and completely brush the cooking plate with melted butter. Pour a little batter into the waffle maker. Quickly close the device and cook for about 4 minutes or until the waffles are golden brown.
